- 2 1⁄3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 3⁄4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1 cup pineapple juice
- 1⁄2 cup canola oil
- 3⁄4 cup sugar
- 1⁄2 cup pure maple syrup
- 2 teaspoons vanilla extract
- 1 cup macadamia nuts, roughly chopped
- 1⁄4 cup crystallized ginger, chopped
- 1 cup unsweetened dried shredded coconut
- 2 cups carrots, grated

frosting
- 1⁄4 cup margarine (at room temperature)
- 1⁄4 cup coconut milk
- 1 teaspoon vanilla extract
- 2 cups confectioners' sugar, sifted
- 1 cup unsweetened coconut
directions
- preheat oven to 350 and have ready 2 8 inch round springform cake pans lightly greased.
- in a large bowl, sift together flour, bakinh powder, baking soda, salt, and ground spices.
- in a separate mixing bowl, mix together pineapple juice, oil, sugar, maple syrup, and vanilla.
- add dry ingredients to wet ones until smooth.
- fold in the macadamias, ginger, coconut, and carrots.
- divide the batter evenly between the 2 round cake pans and bake for 40 - 45 minutes.
- let cool in pans.
- frost with coconut frosting and serve!
- for frosting:.
- cream the margarine until light and fluffy.
- add the coconut milk and vanilla and combine.
- add the sifted confectioners' sugar and mix till smooth.
- add unsweetened coconut and combine.

My name is Meg and I am 21 years old and much like my mom, Karen (kzbhansen), I love to cook... I guess you could say that it is something that I was born to do growing up with my mom's cooking.
Other than that I love music... Mainly heavy metal and rock, I do enjoy some punk bands like The Casualties, The Vandals, The Misfits, The Clash, the Ramones and Rancid. Some of my favorite metal bands are Walls of Jericho, In This Moment, Lamb of God, Amon Amarth, Opeth, Arch Enemy, and Iced Earth just to name a few. and my favorite band doesnt fall in either of those catagories, because they're not really a band, its one guy who plays everything you hear on the cd and he hires people to play with him when he goes on tour, this band is none other than Nine Inch Nails. Love them! They're an industrial rock band, so if you like that kind of stuff, check them out (even though they've been around for years) I spend a lot of my time at home with my bunny or watching movies, thats all I spend any extra money i may have on, is cds and movies. I am totally in love with the Twilight book series, I first got into it when I was a junior in high school and have found that each book is better than the one before... if you havent read them i suggest you run out to your nearest book store and purchase them, you wont be dissappointed
