Ginger Orange Applesauce in the Microwave

- 2 lbs apples
- 1⁄4 cup clementine juice (about 2 clementines)
- 1 tablespoon lemon juice
- 1⁄8 cup Splenda sugar substitute
- 1 -2 tablespoon candied ginger (1-2 pieces)
directions
- Wash, core, and quarter the apples. (I like a variety of apples.)
- Juice the clementines and the lemon.
- Put the apples and both juices into a 2 quart microwave safe dish with a lid. Close it and microwave, on high, for 5 minutes.
- After 5 minutes stir and put back in the microwave for 9 minutes on high.
- When it is done let it sit for a few minutes without the top on to cool a bit.
- Place the apples and all their juice into a food processor and whir until it is nice and creamy.
- Add the splenda and whir a bit more.
- Chop up the candied ginger and fold it into the apples with a spoon.
- Put in a different container and chill.

Yum! This applesauce is so easy to make and has a delicious flavor. I used Empire apples and only needed to nuke them for 9 minutes total. I also like my applesauce chunkier, so I mashed it with a potato masher instead of using the food processor. I used sugar instead of Splenda, adding slightly less than 2 Tbsp. I added 2 heaping Tbsp of ginger and it tasted just right to me. I'll definitely be making this again.
