  • Preheat oven to 350 degrees.
  • Line two 9x4 inch baking sheets with parchment paper and set aside.
  • Measure flour, cinnamon, baking soda and salt into a small mixing bowl. Stir together. Set aside.
  • In a medium bowl, beat eggs, sugar molasses and vanilla until smooth.
  • Add wet ingredients to dry, a little at a time, and mix until a stiff dough forms.
  • Stir in raisins and chopped ginger.
  • Turn dough onto a floured surface and divide in half.
  • Shape into balls and place each piece on a prepared baking sheet.
  • Flatten dough to form a rectangle about 1/2 inch thick.
  • Bake for 30 minutes; cool slightly.
  • Cut into 1/2 inch thick slices with a serrated knife and arrange cut side down on baking sheet.
  • Reduce oven to 200 degrees and bake for 15 minutes; turn and bake 15 minutes more.
  • Cool completely.
