ingredients
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon sesame oil
- 1 garlic clove, sliced
- 1⁄4 teaspoon chopped fresh thyme
- 1 lb fresh green beans
- 1 tablespoon grated fresh ginger
directions
- Combine first 5 ingredients in a jellyroll pan; add green beans, tossing to coat.
- Bake at 400°, stirring occasionally, for 20 minutes or until beans are crisp-tender.
- Toss in ginger.
- serves 6.

We've made this twice now. The first time, I thought the ginger overpowered the dish. The second time, I used half the amount of fresh ginger and thought it was a perfect balance and really enjoyed it. My 5 star rating is based on my modification. The dish is incredibly easy to prepare. I will definitely be making this again. I served it with miso salmon.

I prepped this earlier in the day and threw everything (except the ginger) in a ziplock in the refrigerator until dinner time. This made a really simple side dish even simpler. (I'm not called lazy by chance!). The beans were perfect and the ginger added just the right amount of pizzaz. Thanks for another great recipe, Bev.
