  • Put ginger and water in a small saucepan and bring to a boil. reduce heat to medium-low and simmer 20 to 25 minutes.
  • Strain slices and discard. Stir in honey. I generally use 1 to 1 1/2 tsp of honey for a cup. I don't worry too much about peeling the ginger, as long as it has been cleaned.
