- 300 g self raising flour
- 1 pinch salt
- 3 teaspoons ground ginger
- 100 g caster sugar
- 50 g margarine
- 3 tablespoons golden syrup
- 4 tablespoons milk
- currants
- glace cherries
directions
- Heat oven to Gas mark 3.
- Place flour, salt and ginger in a suitable mixing bowl.
- Warm sugar, fat and syrup together and add to the dry ingredients, mix well.
- Add milk and mix to a firm consistency, Knead lightly with hands.
- Roll out and cut out with a ginger bread man cutter.
- Place on a GREASED! baking tray.
- Mark the eyes with currants and put some down the body to pose as buttons.
- Bake for 10-15 minutes.

Glad to find a recipe without treacle, which I find harder than golden syrup to measure out. Easy to make, takes tweaks very well. I added some chopped preserved ginger, cinnamon and subbed a couple of teaspoons of caster sugar with dark muscavado. Rolled out dough to about 5mm, made lots of smallish stars, and larger rounds. BF very appreciative.
