  • Combine cake mix, flour, eggs oil and molasses and ginger in a large bowl. Stir until thoroughly blended (mixture will be soft).
  • Refrigerate 2 hours.
  • Preheat oven to 375°.
  • Roll dough to 1/4-inch thickness on lightly floured surface.
  • Cut with gingerbread man cookie cutter. Place cutout cookies 3 inches apart on ungreased baking sheets.
  • Decorate as desired using raisins or candies.
  • Bake at 375° for 8-10 minutes or until edges start to brown.
  • Remove immediately to cooling racks.
  • Cool completely.
  • Store in an airtight container.

  1. I tried this recipe as shown a couple of times & the cookies cracked on the surface every time. I tried putting a pan of water on the bottom level to add some moisture, same result. Lower oven temperature, baked for less time, no fail, it always cracked. After making, 50 gingerbread men cookies, I gave up & ended up covering the tops with icing. The children didn't mind & they tasted fine, but it was an awful experience.
     
  2. These cookies are perfect! They stay nice and soft on the inside, with the perfect amount of crispiness on the outside. I made these to give all of my neighbors this Christmas. It seemed like the dough wasn't stiff enough to hold my gingerbread man shape (legs and arms tore off when I picked them up after rolling them!), so I just took a biscuit cutter and made round circles. I used different colors of squeeze frosting and decorated the cookies to look like Christmas ornaments. They turned out to be so cute. And the taste of this cookie is better than any gingerbread cookie I've had before. Awesome, and SO easy! I used Duncan Hines Spice Cake mix, but any would be fine, I'm sure.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
