Gingered Beet and Orange Salad

  • Clean, peel, and slice beets. Place the beets in a large pot. Add the ginger, sugar, zest , and juice from one of the oranges. Cover the beets with water and bring to a boil. Reduce heat and simmer for one hour. Add more water as needed. Mix the cornstarch with 1/4 cup of cold water and add it to the beets during the last five minutes of simmering. Let the beets cool. Peel and section the second orange. Add the orange to the beet mixture. Stir to coat. Serve well-chilled.

  1. Fantastic! Everybody loved it (especially me, since I love fresh beets). I added a squeeze of lemon juice and a pinch of cloves. I'm going to try this with fresh cranberries, for a cranberry sauce. Thanks again for another winner recipe, Miss Fannie!
