  1. Season the chops. Heat the oil in a flat-bottomed wok and fry 2 chops at a time for 4-5 minutes on each side, until golden brown the thoroughly cooked. Drain on kitchen paper and keep hot on a warmed serving dish.
  2. Pour off ay excess fat from the work. Add the garlic, orange juice and rind, then stir in the ginger and syrup. Gradually bring to the oil, stirring then simmer for 2 minutes.
  3. Spoon the sauce over the chops, garnish with orange slices and ginger and serve immediately.
