  • In a 3-cup casserole dish that's microwave-safe, whisk together the sugar, cornstarch and cinnamon; whisk in orange juice.
  • Add carrots and stir.
  • Dot with butter.
  • Cover dish with vented plastic wrap and microwave on High for 3 minutes.
  • Partially remove plastic and stir carrots.
  • Put plastic wrap back in place and microwave on High until carrots are crisp-tender, 2 to 4 minutes longer (depending on the power of your microwave).
  • This recipe can be cut in half to serve one, but cooking time will be shorter.

  1. Quick and easy to make. Loved the flavours. The cinnamon is a nice touch without being overpowering. I must admit to using orange and mango juice instead of just orange juice as it was all I had. It was really good though and I wouldn't hesitate to do it again. I cut my carrots into sticks. Great recipe, enjoyed by all.

  3. Oh these were such good carrots!!! I served them with pot roast and a salad. I made no changes, but wish that the sauce was thicker, so next time I may add more cornstarch. We will have these again soon! Thanks for sharing.
     
  4. A great way to make carrots. The cinnamon is a perfect addition! I doubled the recipe and and I also ended up subbing Sunny Delight instead of the Orange Juice, but it tasted fine anyway. I think next time I will add a bit more cornstarch as already suggested. Thanks for posting this, I'll be making this one again!
     
  5. This was very easy to make and turned out great in the microwave!! My husband loved this recipe, but for me there was just something about it that made it just okay...it might have been that it was too sweet to have with dinner. I'd make it again occasionally, but for me it's not one of those things you can have all the time. I did like the fact that you couldn't really taste the carrots...I'm not a huge carrot person!! It is definitely a recipe to try out and if you are like me and don't love it, it is at least very easy to make so you won't feel as though you wasted your time.
