  • 3 pints strawberries, Fresh, Hulled
  • 3 drops red food coloring
  • 1 cup sugar
  • 1 9-inch baked pie crust
  • 3 12 tablespoons cornstarch
  • sweetened whipped cream
  • 12 cup water

directions

  • Mash 1 pt of the strawberries, using a fork, and set aside.
  • Combine the sugar and cornstarch in a 3 quart sauce pan.
  • Stir in the water and mashed berries.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil, then cook 2 minutes longer.
  • Remove from the heat and stir in the food coloring.
  • Cool to room temperature.
  • Fold in the remaining 2 pts of strawberries and turn into the baked pie shell.
  • Chill in the refrigerator at least 2 hours.
  • To serve, top with puffs of
  • sweetened whipped cream

  1. i convinced my mother to make this at her last barbeque and it was a huge hit! you can even omit the pie crust and just pour the strawberry mixture over pound cake. add some whipped cream and you've got easy strawberry shortcake!
     
  2. This pie was absolutely delicious, but I made the mistake of cutting the strawberries into big slices rather than leave them whole, and it came out like soup. (Maybe my strawberries were extra juicy......I don't know.) In any case, it tasted delicious with whipped cream on top. By the way, the food coloring is totally not needed. Mine was perfectly red without it.
     
  3. This pie is absolutely delicious. My whole family devoured it, and my 4 year old was thrilled that it was easy enough for her to help out! My only wish is that the strawberry measurement had been in pounds. It could have saved me some time. (I researched online and the answer to "how many pounds to make 3 pints" was either 1.5, 2, or 3 depending on which site I read! I ended up using 2.)
     
  4. Ohhhhh, yum! This was very good! I left out the food coloring and cut the sugar to 3/4 cup. I used a graham cracker crust and it was just delish! Thanks so much for sharing! :O)
     
  5. Great recipe. I did not add the food colouring, but did add a squeeze of fresh lemon to the water. I am not sure why, but for some reason my MIL taught me to do that with this exact recipe. Really good. Really easy.

Tweaks

  1. This was so simple and quick to throw together. I doubled the recipe and used premade wheat organic pie shells that I precooked. In the recipe I used splenda granular instead of sugar and actually used frozen strawberries, mashed the softer ones and left the nice small pretty ones in tact. Turned out beautiful! Topped with lite cool whip. Served to guests and was enjoyed by all, except my own husband, who hates anything with splenda in it. Will make again. Thanks for sharing!

I'm a full-time student at a University of Wisconsin campus, with a double major in Sociology and History. I have three adorable children, ages 9 yrs, 5 yrs, and our 2 yr old son. One of my favorite ways to find a book is to walk into the library, pick a shelf and simply grab a book at random. I've read so many great books I probably wouldn't have found out any other way. I also like to camp and fish with my DH. He eats, sleeps and breathes fishing. He would like to one day start his own company, he hand ties and sells fishing lures locally.
