  1. In a shallow dish, combine the first 4 ingredients.
  2. Put the fish fillets in a single layer over the honey-vinegar mixture; turn fillets to coat.
  3. Cover and marinate in the refrigerator for 20 minutes, turn once.
  4. Remove fish from marinade and reserve marinade.
  5. Let the oil get hot over medium-high heat in a non-stick skillet.
  6. Add fish and cook 6 minutes; turn fish; sprinkle with salt and pepper; cook for 3 minutes or until fish flakes easily.
  7. Gently remove fish from skillet and keep warm.
  8. Add reserved marinade to skillet; cook over medium-high heat for 1 minute, deglazing the skillet by scraping particles that cling to the bottom.
  9. Spoon glaze over fish.
