Directions

  1. Boil rice with the salt until well done, according to package directions.
  2. Rinse and drain well; cool.
  3. Make lemon jello, using only 1 cup water.
  4. Drain pineapple and add enough water to make a second cup of liquid.
  5. Cool until jello is almost set.
  6. Whip cream, adding the 1 cup sugar; fold into rice mixture.
  7. Beat the jello and fold that also, into rice and cream mixture.
  8. Add crushed pineapple and let cool until set.
