- 2 cups almond meal
- 2 teaspoons baking powder
- 1⁄4 cup water
- 1⁄4 cup vegetable oil
- 3 eggs
- 1⁄2 teaspoon salt
- 1 teaspoon vanilla essence
- 1⁄3 cup stevia
- 1 cup blueberries
directions
- Oil 6 muffin tin.
- Set oven to 180°C.
- Mix together all ingredients except blueberries.
- Fold through blueberries.
- Bake for 20-25 minutes until a skewer inserted is dry.
- Enjoy!
