  • 1. Place butter, spices, fruit, bicarbonate soda, apple, water and sugar in a saucepan and bring to the boil.
  • 2. Boil for two minutes.
  • 3. Cool a little.
  • 4. Sift dry ingredients.
  • 5. Mix in the rest of the ingredients.
  • 6. Bake at 175C for 50-60 minutes.

  2. This was the best boiled fruit cake that I have ever made, including the ones I used to make with gluten. The besan and glutinous flours are genius, I don't know how you came up with it as it sounds weird, but it made an amazingly light fruitcake. It was wonderful. The only thing I did differently was change the apple for 1 cup of steamed and mashed pumpkin (my Mother's version of boiled fruit cake) Thanks for this recipe, this is the only way I will make it from now on.

Tweaks

  1. 1 cup of mashed pumpkin instead of the apple and I added it after I had boiled the fruit cake. I also used dried figs, craisins, raisins, currants and prunes instead of mixed fruit as that was what was in my cupboard and I like figs.
