  • 12 cup butter
  • 12 cup brown sugar
  • 14 cup egg white
  • 13 cup sweet rice flour
  • 13 cup light stoneground buckwheat flour
  • 12 teaspoon baking soda
  • 12 teaspoon salt
  • 12 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 2 ripe bananas, mashed
  • 1 13 cups gluten-free oats (pure, certified gluten-free)
  • 12 cup semi-sweet chocolate chips or 12 cup butterscotch chips

Directions

  1. Cream butter and sugar together.
  2. Beat in egg.
  3. Mix in flour, soda, salt, and spices.
  4. Add bananas and oatmeal; mix well.
  5. Drop by spoonfuls on greased baking sheet.
  6. Sprinkle with chocolate chips, or melt and set aside.
  7. Bake 10-12 minutes in a preheated 400* oven until edges begin to brown.
  8. If chocolates are melted, spread a dollop on top of each cookie.
  9. Enjoy!
