“I already have a waffle recipe posted that we really enjoyed. However, since posting that recipe, I have discovered some additional allergies and can no longer use the baking mix. This is an adaptation of that recipe that I've come up with and these are a pretty good copy cat of Pamela's Waffles - Gluten Free. This recipe will serve 4 people (3 waffles each) when made in a standard waffle iron that makes 4 waffles at a time.”

  1. Separate the eggs and beat the egg whites until soft peaks form.
  2. Combine flour, salt, baking soda, and ground flax seed in a medium bowl.
  3. In a small bowl, combine the egg yolks, buttermilk and cooled butter.
  4. Add liquids to dry ingredients and stir just until combined.
  5. Fold in egg whites.
  6. Bake in your waffle iron (time will vary depending on your waffle iron).
  7. Serve immediately.
  8. Leftovers freeze well between sheets of wax paper.
