Gluten Free Pancakes

"I made up this 1/2 recipe for my daughter, who is on the GFCF diet. This way, I don't waste the expensive gluten-free flour. You can make these as regular pancakes or add gluten-free chocolate chips or blueberries while cooking for a special treat."

  • 38 cup gluten-free flour (such as Bob's Red Mill)
  • 18 cup sweet rice flour
  • 1 teaspoon baking powder
  • 12 teaspoon salt
  • 1 tablespoon sugar
  • 18 teaspoon xanthan gum
  • 1 teaspoon safflower oil
  • 14 - 12 cup water (to desired consistency)
  • nonstick cooking spray

  • Combine all ingredients in small bowl. Mix well. Let stand for 5 minutes.
  • Spray medium heat griddle with cooking spray.
  • Pour scant 2 tablespoons batter onto griddle.
  • Turn when edges begin to dry.
  • Remove from heat when cooked through.
  • Serve with maple syrup, berries or dust with powdered sugar.
