"Great when topped with whipped cream & berries or jam or chocolate spread. Note: it will not rise like normal wheat sponges do, but the taste is still delicious. All the members in my family thought so anyway :)"

i've been on a gluten-free, wheat-free & lactose-free diet for around 7 years now. both my mum and my brother also follow the same diet as we are all intollerant to gluten & lactose.cooking is one of my passions but unfortunately having to find recipes both gluten & lactose free is no easy task.i therefore try to make up my own versions.i come from an island in the mediterranean where most of our cuisine centres around pasta, breads etc...which neadless to say DOES NOT help at all! but anyway..this site was an enormous help!
