  • Preheat oven to 350°F (180°C).
  • In a large bowl, add almond meal, cornmeal, gluten free flour, salt, baking powder, Splenda and sugar. Mix well.
  • In a medium bowl, beat eggs.
  • Add milk, canola oil, and vanilla extract.
  • Beat wet ingredients well, then add to the dry ingredients.
  • Ensure batter is well mixed and smooth.
  • Pour into greased 9 inch round cake pan.
  • Bake for 20 minutes until light golden brown.
