Go Nuts ...and Bananas!

  • Add the walnuts in a pan and roast them a little,until they become light brown.
  • Add 2 tablespoons brown sugar and stir. When the sugar melted remove and pour the walnuts in a wet dish. Break them up when cold.
  • Add the butter in a pan. Add the bananas and stir slowly.Add vanilla and cinnamon.
  • To serve,place the bananas in an ice cream bowl,slowly mixing with the caramelized walnuts.
  • Sprinkle with the chocolate chips and a little cinnamon.
  • Serve with whipped cream if desired.

  1. I really liked the concept of this recipe. However, I too had trouble with the nuts getting a bit too burnt in the first step. I had to do a second batch of those to make sure they didn't get too bitter of a burn on them. Also, I had the same issue with the vanilla. I just guessed and I apparently guessed an okay amount since it did taste good. However, that was more luck than the recipe. All that said, what I did like was the taste of the ice cream as it melted. Which, got me to thinking that ll of these ingredients would go nicely into making a really good milkshake!
     
  2. This recipe was problematic for me in its execution. I toasted the walnuts to a light brown and then added the sugar, but by the time the sugar had melted to caramelize the walnuts (which is what I understood the chef as wanting us to do) the walnuts were well on their way to becoming burnt and had that 'too far out' flavour. Also, if following directions #3 and #4 and stirring the bananas, both in the pan, and in the bowl to mix with the walnuts, all I got was an unattractive, banana mess. Finally, my last stickler is the vanilla essence listed in the ingredients and the directions. How much? I just added the amount I thought was suitable, but would have liked to know the chef's intent. A simple recipe that tasted OK but had no real !WOW! factor, which is something I look for in a contest recipe.
     
  3. First of all I need to compliment you on originality of naming this recipe. Great job. Simple throw together dessert in no time with simple ingredients. Great use of the ingredient list too Directions could use of bit of improvement, like how long to cook the walnuts. I did coarsely chop my walnuts b/f putting into the pan for more even cooking and I do think the choco-chips could be melted and drizzled over the top of this dessert for more appeal.   4. This was a really good dessert dish, but I had some difficulty with the directions. For instance, the directions don't state at what temperature (and for how long) to roast the walnuts. So I improvised after looking at various roasted walnut recipes, and I decided to roast the walnuts at 350° for 15-20 minutes. After 20 minutes, the brown sugar was nowhere near melting stage, but the walnuts were starting to brown at the edges. I didn't want to risk burning the walnuts by letting them roast any longer, so I just added the sugary walnut mixture to the pan, and let the brown sugar dissolve in the pan a bit while the bananas continued cooking. And that turned out great, and it was a delightful dessert. But next time, I would probably omit the chocolate chips, or at least melt them and drizzle it over the top of each dessert. Because I thought the hard chips were a little too contrasting in texture against the softer texture of all the other sweet ingredients. Made for Ready, Set, Cook #15 contest. Thanks, RSC Chef.

I come from the land of Dracula and I have two little daughters; they're three years apart.I travelled a lot and I lived in Hungary,Croatia,Canada,Thailand,Japan and Iran(DH is from here). I've seen a lot of wonderful places, the travel bug is still in me but waiting for DDs to grow a little so we can go together. Lots of wonderful memories and hoping to add some more,but my travelling style has to be adjusted now.No more backpacking! I feel old,suddenly. My girls are everything for me and I'm lucky that I'm able to be at home with them.My life really changed since having them. I like eating healthy,DH works out a lot and taught me about the right foods.Right now I'm trying to lose a few kg,but I'm happy if I lose one kg/month. Never needed a drastic diet,I drink a lot of water and luckylly there's no McDonalds here(yet) to eat junk food. I prefer homemade cooking to restaurants, these days we can make a better tasting meal at home. I like knowing what goes in my food and what hands are cooking it. I always look at a chef's hands and believe me I've seen dirty fingers too! I came to the Zaar to look for a pancake recipe and now my refrigerator is full with jars of homemade stuff. I made a lot of friends and I enjoy playing in the tag games since receiving a premium membership gift from Sydney Mike. Thank you, Syd. I want to thank everyone who makes my recipes and takes the time to take photos. Sometimes I loose track and I can't get back to thank each person making a recipe. I don't mind if someone doesn't stick to the recipe,everyone's taste and needs are different,sometimes ingredients are hard to find and I know this better than most.
