  • Slice the roma tomatoes and spread them out on a plate or tray.
  • Crumble the goat cheese and arrange on top of and beside the tomatoes.
  • Drizzle a small amount of balsamic vinegar on the tomatoes and goat cheese.
  • Finely chop the green onion and sprinkle on the plate.
  • Add salt and pepper to taste.

Hi! I'm a mid 20-something currently living in Charlotte, NC. I love to cook for family, friends, and boyfriend. Luckily he enjoys my food! I've been a pescetarian for over a year, and I love it. (I try to avoid seafood generally, but sometimes a girl needs a shrimp taco!) My biggest weakness is nachos and my favorite meal is brunch. I eat fresh-cut salsa with as much food as possible. You definitely would NOT call me a health nut, but I do try to stay in good(ish) shape and to eat reasonably well. I get along with almost anyone, as long as they don't block my path to the cheese tray!
