- 2 roma tomatoes
- 3 ounces goat cheese
- balsamic vinegar
- salt
- pepper
- 1⁄2 green onion
directions
- Slice the roma tomatoes and spread them out on a plate or tray.
- Crumble the goat cheese and arrange on top of and beside the tomatoes.
- Drizzle a small amount of balsamic vinegar on the tomatoes and goat cheese.
- Finely chop the green onion and sprinkle on the plate.
- Add salt and pepper to taste.

I've been a pescetarian for over a year, and I love it. (I try to avoid seafood generally, but sometimes a girl needs a shrimp taco!)
My biggest weakness is nachos and my favorite meal is brunch. I eat fresh-cut salsa with as much food as possible.
You definitely would NOT call me a health nut, but I do try to stay in good(ish) shape and to eat reasonably well. I get along with almost anyone, as long as they don't block my path to the cheese tray!
