  1. Wow, who knew three ingredients could combine to make such deliciousness! The goat cheese brings an unexpected tang that really works with the avocado and salmon. I had extra smoked salmon, so used about double the amount. We usually eat 2 open face sandwiches each, so this recipe fed 3 for us as a meal.
     
  2. Made for the Best of 2016 tag game @ FF&F as a favorite of Maito - For reasons I've never fully understood, goats cheese is hard to find here in Iceland. So I researched it on the net & read that simple cream cheese was 1 of 3-4 reasonable subs. So I used it & made the recipe as written except for adding sprinkled dry dill & lemon pepper. I used a mixed bread combo that included flatbread, dark pumpernickel (bakery) & thin-sliced rye (bagels & Eng muffins would also work well). Unlike your intro comment suggested, these ingredients are much-favored staples of the Icelandic kitchen & often eaten for breakfast, lunch, afternoon coffee, starter courses & even w/a sweet treat for dessert. Thx for sharing this yummy recipe w/us. We loved it!
     
  3. I grew up having bagels and lox, so this looked fabulous to me. I made this as a sandwich using everything bagel thins (crust covered in onion, garlic, poppyseed and sesame seed). I didn't love the goat cheese this way, though I usually love it in salads and recipes. I guess it was just too much spread over the entire sandwich. But I love the salmon and avocado combination. I made it again the next day using light cream cheese instead of the goat cheese and that was a 5 star for me. Thanks for giving me another way to eat my smoked salmon.

I reckon my life until now could be described as pretty unusual : I'm 19 and I've moved 5 times between 3 countries! Next year will be my 6th move as I'm going to study in Scotland. I can't wait as I've had enough of living in the depths of the French countryside! Yep, its definitely monotonous here except if you're looking for cows and apple trees! Since living in Germany, (where I went to a Waldorf school) I'm really in to arty things : I love sewing, painting and reading. I also love cooking -especially since I've come across Recipezaar! Update: I'm now at Glasgow University studying English Literature, Spanish and Comparative Literature. It's great here! However I do love going back to France in the holidays again. Now that I'm not at home I have to do a lot more cooking so I try to look for simple things, but I still enjoy it just as much. This site has been really useful for getting ideas.
