Golden Bacardi Rum Cake

  • CAKE: Preheat oven to 325°F Grease and flour 10-inch tube or 12-cup bundt pan. Sprinkle nuts over bottom of pan. Mix together cake mix, eggs, 1/2 cup water, oil, and 1/2 cup rum. Pour batter over nuts. Bake 1 hour. Cool. Invert on serving plate.
  • Prick top. Spoon and brush glaze evenly over top and sides. Allow cake to absorb glaze. Repeat until glaze is used up.
  • GLAZE: Melt butter in medium sauce pan. Stir in 1/4 cup water and sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in 1/2 cup rum.
  • TIP:Chop nuts really fine, the glaze goes through it easier. To prick top and sides, use something long that will go almost to the bottom of the cake. Remember to do the outside and inside at an angle so the glaze goes in all the way.

  1. This recipe calls for an 18 1/2 oz. yellow box cake. This size cake mix has not been available for a number of years. The current size of a yellow box cake mix is 15.25 oz. (432g). Will this recipe still work? Or, does it need to be revised?

  1. I used a box of cake mix with pudding in it and then I added 1 1/2 cups of cake mix from a second box of cake mix. I also used 1/4 cup more each of oil and water to get the right batter consistency. It came out great!

  2. This is a wonderful rich, rummy and sinful cake. Has been in my files for years and can be addictive - especially if you are a rum lover. Thanks for submitting. Feel it is a great cake for entertaining and most will eat the sauce with a spoon!!!

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
