Golden Curry Chili With Chicken

"I searched for ideas on how to use my home made yellow tomato sauce from our garden this year. It was such a nice golden yellow color and I wanted to try something new. If you like curry its a must try!"

ingredients

  • 2 quarts yellow tomato sauce or 2 quarts juice
  • 3 cups diced or shredded chicken (can be done ahead or use leftover)
  • 12 cup diced onion
  • 12 cup diced yellow bell pepper (if you don't mind the color, you can use whatever bell pepper you have on hand)
  • 1 teaspoon minced garlic
  • olive oil or stock cubes to saute vegetables
  • 2 (15 ounce) cans white beans, rinse if desired (or whatever you prefer)
  • 2 cups cooked brown rice
  • 1 tablespoon curry (add more to taste)
  • 1 teaspoon turmeric
  • salt and pepper (black or white pepper depending on color preference in this dish)
  • you can add any other ingredient you prefer in a chili dish. i have added celery, hot peppers and various beans, all worked out well

directions

  • Saute on medium heat in oil or stock (or your personal preference) onion and peppers
  • Add chicken, cook if needed, then garlic.
  • If you used a saute pan, add mixture to stock pot or your favorite pot you use for soup/chili.
  • Add tomato sauce/juice, beans, and spices to mixture.
  • Bring to a low boil, reduce, simmer until reduced to desired consistency -- approximately 45 minutes.
  • Can add water/cornstarch to thicken if desired.
  • Stir frequently.
  • Taste and add additional seasoning as desired.
  • Add rice just before serving.
