ingredients

1 tablespoon annatto oil
2 new potatoes, cut into 8 slices
1 garlic clove, minced
salt and pepper, to taste

directions

Heat annatto oil (adding more if needed) in a heavy skillet over medium-high heat.
Add potatoes and sprinkle with salt and pepper to taste.
Sauté for about 5 minutes, reduce heat and cook for 5 minutes add garlic, continue cooking stirring occasionally, until potatoes are cooked through.
Season with salt and pepper again and serve.

This was part of a Caribbean meal my family shared tonight. I decided to cube my potatoes and bake them in the oven but I did use the ingredients listed. I used Rita's Recipe #109238. The colour of these potatoes was a lovely golden colour with a subtle flavour. Reviewed fr ZWT3

Another of Rita's great recipes - these potatoes are a delicious side dish. I wasn't able to get annatto oil here on the Gold Coast, so substituted with olive oil and a small amount of turmeric for colour. Turned out really well with just a nice touch of garlic flavour - will definitely be made again
