Ingredients Nutrition

  • 6 large red potatoes
  • 1 carrot, sliced
  • 1 cup water
  • 1 teaspoon gluten-free soy sauce
  • 1 tablespoon oil

Directions

  1. Peel and quarter the potatoes. Place them in a heavy 2-qt sauce pan that has a tight fitting lid.
  2. Add the carrot, water and tamari sauce.
  3. Cover and simmer until the vegetables are quite soft. Remove from the heat but do not drain.
  4. Add the oil and whip with electric beaters or a potato masher. If necessary, add a little more water to moisten.
