- 8 -10 medium potatoes, peeled and cubed
- 1 can cream of chicken soup
- 1⁄2 cup butter
- 1 cup sour cream
- 2 bunches green onions, chopped
- 1 lb shredded cheddar cheese
directions
- Cook the peeled and cubed potatoes in large pot with salted boiling water just until tender; about 15 minutes.
- Drain.
- In a seperate saucepan combine butter, soup and sour cream, heat until just melted.
- Layer in a spray coated 13x9" baking dish; potatoes, soup mixture, cheese and onions (in that order).
- Bake uncovered in a 350 degree oven for 30-40 minutes.
- Let cool 5 minutes before serving.

I halved this recipe and made it on a week night with a pork roast. It had great flavor that most of my kids enjoyed. It reminds me of "Gourmet" or "Awesome" potatoes only better because it is from scratch! I quickened preparation by microwaving the potatoes for eight minutes instead of boiling them.

We really enjoyed this! I only used half the amount of cheese (250g) which was more than enough. We had it the first day as a side with meat and it was very nice. But, the next day, we had it for lunch - served as the main part of the meal - and it was awesome. Much better the next day, and I think, as it's so rich, we'll have this one as a main course rather than a side in future.
