  • Cook parsnips in boiling water until a fork pierces them easily. Drain well.
  • Add the butter and salt and pepper. Mash lightly with a potato masher or a fork. The parsnips will still be slightly lumpy.

  1. Simple good taste, easy to make with the full parsnip flavour enhanced by the butter. Parsnips are hard to find here in the Netherlands and the owners of the place where I find mine gave me warning that they were going on holiday this week and that parsnips probably wouldn't be in stock any longer when they got back.. I cleaned out the last of what they had and made this recipe with the very last of them... Your recipe had left me wishing I had more, and that I didn't have to wait for them to come back later in the year. <p>I am a Yankee transplant to the low country. My mom was English, so my cooking style reflects this. My favorite cookbook was McCall's Cookbook which is no longer in print. I've been married to a gourmand for 41 years, so I get lots of practice cooking.
