  • Place chicken, water, broth, carrot, onion, and celery in a one-gallon pot and bring to a boil.
  • Cook until chicken is no longer pink (about 15 minutes).
  • Remove chicken and skim any fat from broth (or refrigerate broth for 2 to 3 hours and then skim fat).
  • Dice chicken into bite-size pieces.
  • Return chicken to the skimmed broth along with all remaining ingredients.
  • Place over high heat and return to a boil.
  • Reduce heat to medium-high and boil gently until pasta is cooked (3 to 5 minutes).
  • Serve right away; the pasta will continue to absorb liquid if the soup is left simmering.

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I work in the billing and customer service office. I love my job, the duties are so varied that you are always working on something different....no time for boredom. <br /><br />I am a mother to four, two sons and two daughters. <br />All have left the roost to start there own family. At last count, I was a granny to 6 boys and 2 little girls. <br /><br />I love Recipezaar and all the new daily postings. I see so much I want to try and continue to save them. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
