- 3⁄4 cup shortening, softened
- 1 cup brown sugar, packed
- 1 egg
- 1⁄2 teaspoon vanilla extract
- 1⁄2 cup applesauce (preferably homemade)
- 2 1⁄4 cups sifted flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 3⁄4 teaspoon cinnamon
- 1⁄4 teaspoon ground cloves
- 1⁄4 teaspoon ground cardamom
- 1⁄4 teaspoon black pepper
- 3⁄4 cup raisins
- 1⁄2 cup walnuts, chopped
directions
- Preheat oven to 350 degrees.
- In large mixing bowl, cream the shortening, brown sugar, egg and vanilla extract.
- Stir in the applesauce.
- Sift together the flour, baking soda, salt, cinnamon, cloves, cardamom and black pepper.
- Stir into the wet ingredients.
- Mix in the raisins and nuts.
- Drop by tablespoonful onto parchment lined or greased cookie sheet.
- Bake 10 minutes, turning the cookie sheet halfway through the baking.
- Remove from oven and transfer cookies to wire rack to cool.
- Yield is estimated.
