ingredients
- 2 1⁄2 cups cooked chicken, diced and chilled
- 1 cup chopped celery
- 1 cup seedless grapes, cut in half
- 1⁄4 cup dried cranberries
- 1⁄4 cup pecan halves, chopped or 1/4 cup slivered almonds
- 2 tablespoons fresh parsley, chopped
- 1⁄2 teaspoon salt
- 1 cup mayonnaise
- 1⁄3 cup heavy whipping cream
directions
- In a medium bowl, whip cream to soft peaks.
- Combine meat, celery, grapes, dried fruit and nuts (or Salad Pizazz), parsley, salt and mayonnaise with whipped cream. Chill.
- Note: Instead of using the dried fruit and the nuts, I always use Salad Pizazz which is a gourmet salad topping that can be found in grocery stores and comes in a variety of flavors. For this salad I like to use the Cherry Cranberry Pecano, the Orange Cranberry Almondine or the Raspberry Cranberry Walnut Frisco.

A truly delicious salad. I made a third portion to take to work for lunch - and to leave some with my mother for her lunch. We both greatly enjoyed this, and I'll certainly be making it again. I added some fresh thyme and used low-fat sour cream instead of the whipping cream, but otherwise made this exactly to the recipe. I used slivered almonds but I am keen to try it next time with the pecan halves. I love both of these nuts, and may make it with both in future. Loved the grapes in this! Thank you for sharing this yummy recipe! So many different and wonderful flavours and great textural variety. Made for Ali Baba's babes for ZWT 5.

Yummy. This salad is really not for simple palates. I loved the contrast of textures. I halved the recipe and used about 1/8 cup celery because I don't care much for it, almonds (chopped and toasted), and cream similar to creme fraiche instead of the mayonnaise, which I don't like. I added a small, chopped cucumber because it needed to be used up. Also reduced the amount of salt and added black pepper. I came out great! Than so much for posting! This chicken salad is so, so delicious! I wasn't sure about the whipping cream, but the creaminess it adds is amazing! I cut the salt in half like another reviewer suggested and it was just right for me. And I used pecans instead of the almonds. This is my new chicken salad recipe. Thanks for posting! Made for Zaar Cookbooks Tag Game.

<p>Update: I have changed my profile picture in honor of my dear best friend and loyal companion that I lost to cancer on 6/25/11. Maxx was the best dog that anyone could ever hope to have in their life. Until we meet again, sweet boy, you will be forever in my heart and memories. I currently live in the country with two dogs (a 12 pound poodle mix named Suki and a new member to the family, a 7-month old(?) 7.5 pound terrier mix named Angel ). I got Angel from the dog pound a week after I lost my beloved Maxx. Suki and I both needed a new companion to help us cope with our loss. Nothing will ever replace Maxx, but she has helped to uplift Suki's spirit. I am a secretary for a county school board. I love to cook, bake, crochet, paint, sew, read and anything to do with crafts. I was born in Tokyo,Japan. My father was in the Air Force and my moher was Japanese. I love to cook (and eat) a variety of foods from many different nations. I especially like trying out new recipes and experimenting with both old and new recipes. I also love participating in the great Zaar events like the tag games, recipe swaps, and Zaar World Tours. I recently participated in my first RSC contest. I have definitely had a lot of fun since joining Recipezaar. Update - September 20, 2007 I am proud to announce that I have just been blessed with my first grandchild. My son and daughter-in-law have given me a beautiful little granddaughter.
