“This recipe was given to me years ago by a very good friend who was an excellent cook. I have made it over and over again. My husband loves it! I have never had it with mashed potatoes, only riced!! Great to make ahead, refrigerate, bring to room temperature and cook when needed!!”

Directions

  1. Boil potatoes in salted water to cover until tender.
  2. Mash or rice potatoes.
  3. Whiles still hot, add sour cream, cottage cheese, onion, butter or margarine, pepper and salt, and mix well.
  4. Place in casserole.
  5. Sprinkle parmesan on top.
  6. Bake in preheated 325 degree oven for 30 minutes.
  7. Recipe easily doubled.
