ingredients
- 3⁄4 cup cooked rice
- 3 tablespoons sugar
- 2 eggs
- 3⁄4 cup skim milk
directions
- Beat eggs, sugar, and milk together.
- Add rice and add cinnamon and raisins to taste; stir.
- Microwave for 10 minutes, stirring halfway through.

I modified this for 1 serving. I used 3/4 cup brown rice, 1 egg, 1/2 cup 1% milk, 3 tablespoons raisins, and some vanilla and stevia. I microwaved it on 50% power for 8 minutes, stirring halfway through. Like others mentioned, it came out eggy and although it tasted okay I wouldn't make it <br/>again.

Sorry! Not bad, but not good. Perhaps it needs to be cooked on lower power or maybe just one egg? My eggs cooked a bit, so I ended up with small bits of scrambled egg mixed with the rice which is really the only problem with mine. Or maybe stirring more frequently would be better. I cooked 3 1/2 min on high, stirred, then reduced power to 50% for another 2 1/2 min. Added a little extra milk b/c I like it creamy. Also like rice pudding cold, so made ahead for this evening. Good use for leftover rice, but recipe needs modifications.

Really tasty and easy. I used 1 teas. of cinnamon and added 1/2 teas. nutmeg and no raisins. (Should list raisins and cinnamon in ingredients list-to taste). I microwaved on high for 5 minutes and realized another 5 minutes on high was too high, so turned power down to 50% for last 5 minutes. I doubled the recipe and it worked fine. Made for Spring 2008 PAC.
