Granary Toasts With Smoked Fish, Horseradish, and Orange

"A very gourmet way to use up the leftover bits of smoked mackerel we have, which is a real favourite at our house. You could easily multiply this for a great party pleaser, I think, though you'd need to assemble it at the last minute so it wouldn't go all soggy."

  • 2 slices granary bread
  • 1 tablespoon horseradish cream
  • 12 orange, peeled and thinly sliced into rounds
  • 2 slices boneless smoked mackerel, skinned and flaked

  • Lightly toast bread slices. Spread each slice with horseradish cream. Top with orange slices and pieces of mackerel. Grill/broil under medium-low heat 2-3 minutes.

I'm an American living in London since I got married in 1994 (except for a brief stint in New Jersey, and then Luxembourg).
