Grandma Lucy's Date Squares

- 1 3⁄4 cups Quaker oats
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 3⁄4 cup melted shortening
- 1 cup brown sugar

- 1 package dates, chopped
- 1 cup hot water
- 1⁄2 cup brown sugar
- 1 teaspoon vanilla
directions
- Mix oats, flour, and baking soda.
- Add shortening.
- Prepare filling by mixing chopped dates, hot water, brown sugar, and vanilla.
- Put 1/2 dry mix in a baking pan.
- Add filling.
- Top with rest of dry mix.
- Bake 20 minutes at 350, or until well browned.

Donna, give your Grandma Lucy a big hug from me! I made these on Friday afternoon to serve with Saturday lunch. By 4 PM there wasn't much left, in spite of the fact that I told everyone to leave them alone. I quickly made up another batch and hit them in the fridge. I served them on Saturday warm with some vanilla ice cream on the side, and most people asked for seconds, one even had thirds! Thanks for a fantastic recipe, this one is a winner!

My Squares didn't turn out so well. The recipe did not specify pan size, but I used an 8X8 baking pan (since it yields 8 servings) and the baking time was not nearly long enough. Even after 35 minutes the top didn't brown. Seems like there was not enough shortening (the pastry was so crumbly that most of it fell off). Also, faced with several sizes of packaged dates, I don't know if I should have used more or fewer dates (my package yeilded 1.5 cups). If I made them again, I would use a larger baking pan, and more shortening so that the pastry would hold together and not flake off. The flavor was good, and I liked the enthusiasm of the introduction which is why I selected this recipe to try over some others.

A definite 5 star keeper in my book! Very simple ingredients and very simple to make. I used a 11"x7" dessert pan and these squares were eye popping thick and picture perfect. Anything I put oatmeal in I always add a touch of cinnamon. I sprinkled some cinnamon in but next time will use a bit more. Thank you, thank you for a date square recipe I've been looking for ...... for a long time!
