Grandma's Avocado Black Bean Salsa

- 10 fresh tomatoes (diced)
- 1 medium onion (diced)
- 1⁄3 cup cilantro (leaves only)
- 1 (5/8 ounce) package Good Seasonings Italian salad dressing mix
- 2 avocados (diced)
- 1 (15 ounce) can black beans (S&W Frijoles Negros)
- 1 (15 ounce) can white shoepeg corn
- 1⁄8 - 1⁄4 cup lime juice
directions
- I put the avocados in the lime juice for a few minutes to preserve color. About 2 limes make enough juice. Drain and rinse the black beans. Drain the corn. Allow to sit to blend flavors. (I used plain white corn. I couldn’t find Shoepeg, whatever that is).
- This makes a LOT but it lasts several days in the fridge. (I'm told. Mine has never lasted more than 12 hours without being devoured. --Livi).
