  1. I put the avocados in the lime juice for a few minutes to preserve color. About 2 limes make enough juice. Drain and rinse the black beans. Drain the corn. Allow to sit to blend flavors. (I used plain white corn. I couldn’t find Shoepeg, whatever that is).
  2. This makes a LOT but it lasts several days in the fridge. (I'm told. Mine has never lasted more than 12 hours without being devoured. --Livi).
