  • 1 12 lbs hamburger
  • 2 (10 1/2 ounce) cans vegetable soup with beef stock
  • 2 medium potatoes

directions

  • Brown and drain hambuger.
  • Peel and slice potatoes into thin slices.
  • Add two cans of vegetable soup.
  • Mix well.
  • Cover and bake at 350 degrees for 1 hour (or until potatoes are done).

  1. Very flavorful for only having 3 ingredients! I used Campbell's Vegetable Beef soup and cubed my potatoes instead of slicing. The mixture seemed to thick so I added 1/2 cup of water and it worked great, we had a nice gravy. This would be also be good on a cold day with a loaf of warm bread.
     
  2. We call this "Campfire Stew" in my family. We don't add the potatoes tho. I just brown the hamburger, throw in some cans of condensed veggie (don't add the water) and simmer until hot. Eat with bread and butter or make some corn bread if you have time.
     
  3. This is the quintessential comfort food! A flexible and easy meal that's great on a cold day. I made it as posted this time (with a store-brand vegetable beef-barley soup), but next week I will try with ground sausage and a tomato-based vegetable-alphabet soup.

Tweaks

  1. I also added about a can of water before cooking. It seemed too dry without it.
