  • Line an 8" pie pan with pastry (I use my Aunt Nancy's Flaky Pastry Pie Crust, found here in this site).
  • In a saucepan, combine undrained pineapple with cornstarch, sugar and salt. Cook until thick and clear, stirring constantly.
  • Remove from heat and stir butter and lemon juice.
  • Pour into pastry lined pan.
  • Roll out and cut remaining pie crust into strips and weave to make a lattice top pie.
  • Bake at 425° for 25-30 minutes.
