- mix all ingredients together, just until smooth.
- let sit for a few minutes until batter becomes lighter cook on hot griddle (about 325 degrees) feel free to add chocolate chips, banana or whatever floats your boat!

The pancakes were definitley light and fluffy, however, I found there to be a slight bitter aftertaste. I made them twice using different ingredients (e.g., fresh flour, etc) to ensure that wasn't the problem. Unfortunately, the bitter taste was consistent. I'm wondering if there is a modification that would keep the pancakes fluffy but make them a bit sweeter.
