Grandma's Oatmeal Cookies

ingredients
- 1 cup shortening or 1 cup margarine
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 2 tablespoons vanilla
- 1 1⁄2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 3 cups chopped nuts
- 3 cups quick oats
- 1 cup raisins
- 1 cup shredded coconut, well packed
directions
- Preheat oven to 350 degrees.
- Cream shortening or margarine and sugars.
- Mix in eggs and vanilla.
- Sift flour, salt, and soda, and fold into creamed mixture. (I like to plump my raisins before adding them. If you do, do not sift the flour.).
- Fold in oats, nuts, raisins, and coconut.
- Drop by spoonful or scoop onto cookie sheet.
- Bake for 8-10 minutes or until golden brown.

My husband and I moved to Tennessee from Pennsylvania in 2005. We absolutely love it here, especially being near the Smoky Mountains. My kids are grown and are out of the house. I am a nurse practitioner, work for Evercare, a division of United Healthcare, caring for elderly patients in nursing homes. My husband and I love the outdoors, and we especially enjoy hiking in the Smoky Mountains. I also enjoy doing Jazzercise as often as I can get there.
