  • Preheat oven to 350F and line a 9x15 pan with parchment.
  • Filling:.
  • Chop sugar and raisins in a food processor.
  • Whisk cornstarch in water.
  • Add cider.
  • Add raisin mixture and mix well.
  • Simmer 5 minutes.
  • Cool.
  • Dough:.
  • Mix flour, baking soda and salt.
  • Cream shortening and add brown sugar.
  • Beat in egg and vanilla.
  • Add flour mixture.
  • Beat in oats.
  • Spread half in pan.
  • Top with Filling.
  • Spread remaining crumbs on top.
  • Bake 30 mins.
  • Cool and cut into bars.
