  • 2 cups cooked salmon, chopped (leftovers are great for this)
  • 4 eggs, separated
  • 1 (10 ounce) can mushroom soup
  • salt and pepper

directions

  • Preheat oven to 350°.
  • Grease a casserole dish.
  • In one bowl, beat together salmon, egg yolks, soup, salt and pepper.
  • In another bowl, beat egg whites with an electric mixer until stiff.
  • Fold the two mixtures together with a spatula, then pour into casserole dish.
  • Bake for 1 hour.

  1. I didn't know what to do with the cream of mushroom soup, so left out. Also didn't have enough salmon to make two cups so added diced brocolli. This was pretty good. I emailed Sunny and she said to add the cream of mushroom soup with the egg yolks and salmon. Will try that the next time.
