"This is an old time favorite memory of the family. Most every time we would visit Grandma's, she would have some zucchini bread to serve with coffee, along with some old time stories of the good ol' days."

3 eggs
1 cup oil
2 cups sugar
2 teaspoons vanilla
3 cups flour
¹⁄₂ teaspoon baking soda
1 teaspoon salt
1 ¹⁄₂ teaspoons cinnamon
³⁄₄ teaspoon nutmeg
2 cups zucchini (grated)
1 (8 1/2 ounce) can crushed pineapple (drained)
1 cup nuts (optional)

directions

Bake @ 350
Beat the eggs, oil, sugar and vanilla until thick and foamy.
Stir in all other ingredients.
