  • Boil potatoes until tender; allow potatoes to cool; then peel and cube them; set aside.
  • Fry bacon and onion together in a large skillet.
  • Add in potatoes and seasonings; cook until golden brown, stirring occasionally.

  1. NurseDi - be brave and try this recipe -- it's a staple in the South and many bar-be-que restaurants have this on the memu -- I would just make a suggestion for anyone trying it for the first time -- you need to drain most of the bacon grease off.
     
  2. Mighty fine mighty fine. this old boy know when they have great vittles on the table. all you need now is the eggs, sausage and biscuits. with some homemade strwberry jam and butter. mighty fine.

I have made potatoes very simular to this for decades!! but wanted something a wee bit different & this was just PERFECT Had boiled tatters in jacket for supper last night so this was just perfect timing..I had them for this a.m. breakfast...they were just plain awesome.. just the little extra something I was looking for..I used kitchen shears to cut the bacon in bit sized pieces( I only had about a 1/2 pound but was good enough for my taste) and I didn't peel the potatoes only because I was to lazy this a.m. they were WONDERFUL!! this for me was a "why didn't I think of that" (using the bacon when cooking) seeing how I have been making these well over 40 + years..
