  • In small saucepan put honey, peanut butter and cinnamon, Heat just to combine.
  • Remove from heat and add vanilla.
  • Combine oatmeal and coconut in bowl and pour peanut butter.
  • mixture over and stir. Place in greased 8 or 9 inch baking dish.
  • Put in preheated 275 degree oven for 30 to 45 minutes, stirring.
  • every 15 minutes. Turn oven off and let sit for 20 to 30 minutes in oven.
  • Add to remaining ingredients and enjoy.

I did cut it in half, but I will be making it again & might just increase the amount of dried fruits that I use! Thanks for sharing this great recipe!
