  • Preheat oven to 325°F Lightly grease a large baking pan.
  • Combine oats and almonds on the pan.
  • In a small bowl, combine the butter and honey, stirring well.
  • Pour honey mixture over oats and almonds and mix well.
  • Sprinkle the brown sugar and cinnamon over the oat mixture, and mix together.
  • Bake until light brown, about 10 minutes, stirring frequently.
  • Remove from oven and stir in coconut. Return to oven and continue to bake until the mixture is brown, about 5-10 minutes, stirring frequently.
  • Remove from oven and stir in raisins or dried cranberries. Allow to cool, stirring periodically.
  • Store in tightly covered container.

  4. This granola is wonderful, one of the best Ive ever made. It is crunchy with big chunks and tastes so yummy! I loved the combination of coconut, almonds, honey, oats and raisins. Mmm! I made half the recipe reducing the honey to 1 tbs and the oil to 1 tbs as well. I made up for the lack of liquid by adding 2 tbs of applesauce. Also, since I like my coconut toasty, I added it from the start. This worked out so well, your times and temp are spot on and the granola came out perfect.   5. Yummy and luckily this mix was ~Tasty Dish~ approved! I used a variety of dried fruit: cranberries, currants, blackberries, blueberries. The coconut was reduced by half (in case there were any complaints of "too much coconut" from ~TD~), and I used finely grated coconut so it would "melt" into the mixture. Threw in a few pepitas as well. Not too sweet and will make again soon! Easy! Reviewed for the ongoing Veg Tag/October and for the VIP of the month!
