Granola Bars!

"This is a great treat and with the oatmeal, wheat flour, egg beaters, and canola oil is heart healthy as well. I have also tried it with applesauce instead of the oil and it turned out fine as well."

  • Preheat oven to 350ºF. Generously grease a 9x13 inch-baking pan. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
  • Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

  1. These are just tolerable for us; they are soft with a heavy, cakey texture. But I probably made some bad substitutions. I used oat bran instead of wheat germ, and didn't have enough rolled oats so had to use partly quick oats. I did use whole wheat PASTRY flour, which is much lighter than the average wheat flour. I also subbed applesauce for the oil, and that made them just a little rubbery. I think what saved them for my husband and I is we used chopped dried cherries instead of raisins. The tart cherries are wonderful in bars!
     
  2. wanted to update my review. i've made these several times- such a great healthy snack. because these are so sweet, i found that i can entirely omit the sugar and the honey provides plenty of sweetness.
     
  3. This is a great basic bar for nut-free schools! Quickly made and easily done. Also, very forgiving of subsitutions! I used Baker's Prune Butter (substitute for Oil in Chocolate Cakes) Recipe #114094 instead of oil, threw in 1/4c of oat bran and instead of raisins; chopped dried fruit and carob chips.
