Granola Bars

"No high-fructose corn syrup in these! You can change these up to suit your mood and they still taste just as yummy. My 3 year old loves them, and my husband takes them to work for snacks."

  • Preheat oven to 400 degrees.
  • Line a 13x9 inch baking dish with waxed paper and spray with cooking spray.
  • Crush peanuts, in ziploc bag with a rolling pin, or other heavy item.
  • Mix the oats, wheat germ, sunflower seeds, and peanuts on a cookie sheet and place in the oven.
  • Toast them in the oven for about 10-12 minutes.
  • In a medium saucepan mix the brown sugar, honey, butter, vanilla, and salt.
  • Cook over medium heat until butter and honey melt and the whole mixture is bubbley. This will be your "glue".
  • After removing your oats from the oven put them into a large bowl, then add your "glue" and the dried fruit.
  • Mix all the ingredients well. You want everything to be well coated with the "glue".
  • Dump all into the prepared 13x9 pan, and using another sheet of waxed paper press the mixture into the pan (I like to use a pot holder on top of the waxed paper as the mixture is quite hot yet). You want to really press it into the pan or when you cut them into bars they will fall apart.
  • Cool completely in the pan, then remove, peel off the waxed paper and cut into bars.
  • Wrap the bars in plastic wrap, and you have individual granola bars ready for lunch boxes or on the go snacks!

I made a lot of substitutions: almonds and walnuts instead of peanuts), chia seeds, wheat bran, and flax seeds instead of sunflower seeds, and I added some chocolate chips. The only problem I had was cutting them...it was really hard. But the great thing is they stuck together, which is hard to achieve with homemade bars!

  3. These are so good! Can't wait to try them out with different kinds of nuts and different kinds of dried fruit. These look great for outdoor activities like biking or hiking because they don't have chocolate so they won't melt.
