Granola Bars With Coconut and Dried Fruit

"A yummy recipe that the whole family will love. Suitable for people with milk, egg, nut allergies. I based it on a granola recipe I found at http://alifelesssweet.blogspot.com/2008/07/chewy-granola-bars.html but I changed some ingredients. I use Tupelo honey to give it a great subtle flavor. Use unsweetened coconut, if you can find it."

  • In a food processor, chop dried fruit.
  • Pour boiling water to cover.
  • Let fruit stand 2 minutes, then drain water.
  • Mix together oatmeal, flour, baking soda, brown sugar.
  • Mix together vanilla, oil, honey together. Add to dry ingredients.
  • Stir in the dried fruit and coconut.
  • Mix well!
  • Spread in a 9 x 13 inch greased pan.
  • Bake at 325 F for 20 minutes.
  • Allow to cool for 10 minutes.
  • Cut into bars.
